A Cuisine Shaped by Cultures
Peruvian cuisine has been shaped by generations of migration and cultural exchange. Two of its most distinctive influences are Nikkei and Chifa cuisine, both of which bring their own ingredients and techniques to Peru’s culinary traditions.
Nikkei – Japanese & Peruvian
Nikkei cuisine reflects the influence of Japanese migration to Peru, combining Japanese techniques with Peruvian ingredients and flavours. Fresh fish, precise preparation, citrus and chilli come together in dishes such as tiradito, creating food that is delicate, vibrant and unmistakably Peruvian.
Chifa – Chinese & Peruvian
Chifa developed from the influence of Chinese communities in Peru, bringing wok cooking, soy and other Chinese ingredients together with Peruvian produce. Saltado is one of its best-known expressions, combining fast, high-heat cooking with the bold flavours of Peru.

Our menu brings together Peruvian classics and contemporary dishes inspired by Peru’s diverse culinary heritage. Highlights include Ceviche Clásico, with stone bass, tiger’s milk, choclo and sweet potato; Tuna Tiradito, combining tuna with ají amarillo, avocado and caviar; and Wagyu Beef Saltado, our take on the Peruvian-Chinese classic.
Lamb Chops al Josper, inspired by the traditional Peruvian cooking technique of pachamanca, showcase the depth and character of Peru’s cuisine. Seasonal ingredients and changing inspirations keep the menu fresh, while Peruvian flavours remain at its heart.
